Boat made Chicken Roti from sctratch

Today we made authentic Caribbean chicken Roti inspired by Sue Roti in Falmouth Bay Antigua.  Several days ago we hade some wonderful roti from Sue and decided to try our hand at this wonderful dish.  We dug through the stores and found everything we needed except potatoes.  Off to the store in Parham to get them and we found an icecream parlour along the way….. sweet!

Roti is actually very simple to make. It just takes a bit of time to make and roll the dough but only minutes to cook.  The curried chicken filling took a bit longer so we started that first.

Once the curry chicken was simmering filling Saphira Blue with a delicious a aroma, we set about making dough.

After the dough sat for 15 minutes, roll and cook for 1 minute each side.  The kids wanted to roll their own Roti.

Insert filling and enjoy.

I think we would have made Sue proud for first timers.

Easy, inexpensive and delicious!

  1. I’ve been enjoying roti since the 70s in St. Croix but the best I’ve had is here in Nevis. Go to Best Buy in Gingerland and get roti at their deli counter. Get it before the school kids empty all the hot meals at lunch time.
